Crockpot pepper steak is a recipe that I found online. I made this as directed here in this video. If I am being honest, it wasn’t as good as I had hoped. The steak was a little too tender and more akin to stew meat. It looked tasty, but the flavor left something to be desired as well. I also added some steamed broccoli to the top of this both for color and texture. All of that said, there is some potential here. I am going to try this again and add some onion soup mix next time. It was a lot like beef tips so I am going to use that as a reference.
This crockpot pepper steak recipe is almost a combination of beef tips and stir fry. While the former is great in a crockpot, I have never tried a crockpot stir fry before. I always try to start with a good cut of meat for a recipe like this so I got a nice New York Strip for this and cut it into strips. Perhaps I would have had a better meat texture if I had seared my steak first. I will try that next time.
The beef stock, soy sauce and brown sugar had me thinking this was going to be an explosion of flavor. It was good. My wife and I both ate it. It could just have some more flavor.
Crockpot Pepper Steak
Equipment
- Crockpot
Ingredients
- 1 pounds steak
- 2 bell peppers
- 1 onion
- 1.5 cups beef stock
- 3 tablespoons soy sauce
- 1/4 teaspoons ground ginger
- 1/4 teaspoons garlic powder
- 1/4 teaspoons black pepper
- 2 teaspoons brown sugar
- 1/2 cups broccoli steamed
Instructions
- Slice steak into strips
- De-seed and slice peppers
- Slice onion
- Add all ingredients to a crockpot
- Cook on low for 6 hours or high for 4 hours
- Serve over a bed of rice
- Top with steamed broccolli
