Steak fajitas are steak, peppers and onions rolled in a flour tortilla with sour cream and cheese. At least that is how I make them. If I am being honest I’m not entirely sure how to make a fajita. This is the way I have always done it.
It’s almost like my smothered burritos recipe only, add peppers, remove queso and rice. like that recipe, I like to use a good cut of meat. When you are making a recipe where the main ingredient is steak it’s only going to be as good as your piece of meat. I tend to go to our local butcher shop and get a nice sirloin or New York strip.
A lot of recipes for this likely use different seasonings and/or ingredients. I just used simple steak and some beef rub that I have and let the onions and peppers do their thing. In this video, I used quesadilla cheese that I found at the grocery store. Buying cheese by the block and shredding it yourself will give you a better melt.
You will also notice that I have a second pan with only vegetables going in this video. At the time I made this video my wife was taking a break from meat for a bit. While I made my steak fajitas, I made her a vegetable fajita. It was exactly the same as mine only she didn’t have the steak and put some salsa on it.
Steak Fajitas
Equipment
- Large cast iron skillet
Ingredients
- 1 pounds steak
- 1 onions
- 1 peppers
- 1/4 cups sour cream
- 1/4 cups shredded cheese
Instructions
- Dice peppers and onion
- Cube steak
- Cook steak in oil to desired doneness
- Add peppers and onions to steak
- Put flour tortilla in warm oven for about 20 seconds
- Add steak, onions and peppers to warm tortilla
- Top with sour cream and cheese
- Roll up tortilla
