Smothered burritos are a steak and rice filled burrito smothered in gooey white queso. Â These can be found in places like Qdoba and Chipotle. Â In my hometown we had a little hole in the wall shop called Burritos On Broadway that had “smothered burritos”. Â A few years ago the bar next door to it caught fire and Burritos On Broadway took so much smoke damage that they closed down for good.
Since then, I’ve worked on a burrito recipe of my own. Â This is a bit of a chore if you want to make it completely from scratch like I did here. Â You can use a store bought queso and instant rice for this if you like. Â I made a batch of wild and white rice and some homemade restaurant style queso for this recipe. Â While the store stuff works fine, it just isn’t as good as making it at home. Â That said, it’s a lot more work. Â I still think I was able to knock this entire recipe out in an hour.
I make mine with only steak, rice, sour cream and cheese inside. Â It’s very common to add some black beans, salsa or any of the other things you’d put in a traditional burrito.
Smothered Burritos
Equipment
- Large cast iron skillet
- Small cast iron skillet
Ingredients
- 1 pounds steak cubed
- 2 cups rice cooked
- 2 cups restaurant style queso
- 2 cups shredded cheese
- 1/2 cups sour cream
- 4 large flour tortillas
- 1/4 cups picante sauce or salsa
- 2 tablespoons olive oil
Instructions
- Heat 2 tablespoons of olive oil in a large cast iron skillet
- Cube your steak into small chunks and add to hot oil
- Season steak with desired seasonings as it cooks
- Add picante sauce or salsa to steak when about 50% to desired doneness
- Put queso in small pan over low heat to warm
- When steak is done remove from heat and keep in pan to stay warm
- Place your tortillas in a warm oven for 30 seconds
- Remove warm tortilla and spread 1/8 cup sour cream over half of tortilla
- Distribute hot steak cubes on top of sour cream
- Cover steak with rice and shredded cheese
- Roll burrito and place on plate
- Cover entire burrito with hot queso cheese
- Top with shredded cheese
