Restaurant style queso is something that I’ve been on the hunt for for quite some time now.
I have found numerous store bought queso dips that claim to be just that. They aren’t. I have tried the stuff in jars, the stuff in boxes that you through in a crock pot. You name it, I’ve tried it. They taste ok with a bag of tortilla chips, but they aren’t that authentic taste.
Making homemade nacho cheese is something I have done quite often as well. Sometimes it’s melting shredded cheese down with some salsa and milk. Sometimes it’s just throwing shredded cheese on top of some tortilla chips and nuking them in the microwave.
Those are all good and fine, but I want that restaurant style queso. I want to throw it in a crockpot and bring it to a super bowl party. I have finally found that recipe. The thing I have been missing this whole time? Green chiles and the right cheese is what makes this recipe what I have been searching for.
For cheese, get a high quality American cheese. Don’t buy the singles wrapped in plastic. Don’t buy the generic brand. At the very least, get the name brand “premium” quality sliced cheese. I have found that American cheese doesn’t have a lot of options.
I used this recipe recently on my Smothered Burritos and it really made them taste even better than they already did. This recipe will work just as good in a crockpot as it does on the stove top.
All this takes is three ingredients and a little bit of stirring. Scale it to your desired need.
Restaurant Style Queso
Equipment
- Medium size cast iron skillet or crockpot
Ingredients
- 16 slices premium white american cheese
- 1 cups half and half
- 2 tablespoons green chiles
- 1 tablespoons butter
Instructions
- Melt butter in pan
- Add half and half to pan
- Add green chiles
- Slowly add sliced cheese in small pieces
- Stir frequently until cheese is completely melted and hot
