Teriyaki Chicken Stir Fry

Teriyaki chicken stir fry is marinated chicken breasts fried with vegetables over a bed of rice. The first time I tried teriyaki chicken was at a friends house years ago and I love the flavor of it.  I have experimented with numerous stir fry recipes over the years and teriyaki chicken stir fry is just one variation.  I have tried not only sauce variations but meat variations as well.  Cutting up a good steak and cooking it in soy sauce can make for a delicious stir fry as well.

For this recipe I used fresh vegetables rather than frozen ones.  I also fried them with the chicken.  While it may not be considered “stir fry”, I frequently steam my vegetables first.  I sometimes find that cooking them with the meat can make them a bit soggy.  If you steam them first so that they are hot and then just finish them off with the meat and sauce you can get the best of both worlds.

I like to serve stir fry over a bed of rice but it can be served over noodles as well.  I have even made stir fry and put it on top of cooked ramen noodles before.  It’s a cheap and easy way to finish this off.

Pair this recipe with some cream cheese wontons to complete the meal.

  • Chop vegetables
  • Chop chicken
  • Marinate chicken in teriyaki sauce for 2 to 10 hours
  • Fry chicken in olive oil
  • Add more teriyaki sauce
  • Cook chicken until cooked thoroughly
  • Add chopped vegetables
  • Serve over rice
