No Meat Chili

No Meat Chili

No meat chili for the vegetarian chili lover.  While I’m not a vegetarian myself I do frequently make meatless versions of recipes and figure it might help somebody that is looking for a meat free recipe.

This no meat chili recipe is the same recipe I generally make sans the 1 pound of ground beef that I brown as the first ingredient generally.  I will post a traditional meaty chili recipe in the near future.  I made one a few years ago that was 100% grilled chili.  That is one that needs some further exploration.

Growing up in the northern United States there is nothing like a bowl of chili on a cold, snowy day.  This time of year, we tend to have a lot of those days.  I alternate between a red chili like this one and White Chicken Chili.  I am a big fan of Chili Cheese Dogs and this works great for that; with or without the meat.

There are just so many things you can do with chili.  Make it and eat it with crackers or on a chili dog when fresh.  Throw the leftovers in the fridge and make some chili mac n’ cheese with cornbread with it later.
