No meat chili for the vegetarian chili lover. Â While I’m not a vegetarian myself I do frequently make meatless versions of recipes and figure it might help somebody that is looking for a meat free recipe.
This no meat chili recipe is the same recipe I generally make sans the 1 pound of ground beef that I brown as the first ingredient generally. Â I will post a traditional meaty chili recipe in the near future. Â I made one a few years ago that was 100% grilled chili. Â That is one that needs some further exploration.
Growing up in the northern United States there is nothing like a bowl of chili on a cold, snowy day.  This time of year, we tend to have a lot of those days.  I alternate between a red chili like this one and White Chicken Chili.  I am a big fan of Chili Cheese Dogs and this works great for that; with or without the meat.
There are just so many things you can do with chili. Â Make it and eat it with crackers or on a chili dog when fresh. Â Throw the leftovers in the fridge and make some chili mac n’ cheese with cornbread with it later.
No Meat Chili
Equipment
- Cast iron dutch oven or crockpot
- Strainer
Ingredients
- 2 cups tomato sauce
- 1 yellow onion diced
- 1 bell pepper diced
- 2 tablespoons chili seasoning
- 1 tablespoons cumin
- 1 cans black beans
- 1 cans dark red kidney beans
- 1 cans great northern beans
- 1 cans red kidney beans
- 1 cans rotel
- 1 chocolate bar
- 2 cups shredded cheese
Instructions
- Drain beans in strainer and rinse with cold water
- Dice onion and pepper
- Add tomato sauce to dutch oven
- Add beans, diced onion, diced pepper and rotel to tomato sauce
- Add chili seasoning and cumin to taste
- Break chocolate bar to chili mixture
- Cook over low heat, stirring occasionally until hot
- Top with shredded cheese
